Crossing Borders: A Four Hands Feast

Apéritif Restaurant presents Crossing Borders, a Four Hands Dinner featuring Executive Chef Nic Vanderbeeken and guest chef Esca Khoo. This collaboration brings together two chefs with strong culinary identities and a shared commitment to bold, refined flavours.

Chef Nic, known for his European technique and deep understanding of Indonesian ingredients, brings a precise and produce-led approach shaped by years in fine dining kitchens. Joining him is Esca Khoo, a Malaysian-Australian chef whose bold, expressive style channels a personal journey through Asia, infused with history, people, places, and spice-laced memories.

The experience begins with four snacks, two from each chef, followed by a seven-course menu. Each chef presents three courses that reflect their individual style, culminating in a collaborative dish that draws on the culinary traditions of both Malaysia and Indonesia.

Crossing Borders is a thoughtful expression of borderless cuisine. It brings together fire, finesse, and flavour in equal measure, offering a night of storytelling through food in the intimate and immersive setting of Apéritif Restaurant.
