June 2025
Hi, apa kabar? Warm hospitality greetings from all of us at BRCA!
Wow, mid-year already! Feels like we blinked and suddenly June is here. We hope things are running smoothly at your café or restaurant, and that you’re finding moments to enjoy the ride (maybe even sneak in a sunset or two).
This month, we’ve teamed up with some incredible sustainability partners doing meaningful work right here in Bali and beyond. These collaborations are all about adding value to your membership and supporting your business in ways that matter. Take a moment, grab a kopi, and dive into this month’s updates. We’re excited to share what’s new and what’s next.
MONTHLY LUNCHEON
The Cellardoor, Hatten Wines, June 11, 2025, Hosted By BRCA
It was a sunny Wednesday when we headed to the heart of Sanur for another great BRCA luncheon. This time, we were welcomed by Hatten Wines at their cozy spot, The Cellardoor, right on the busy Bypass Ngurah Rai. And let’s just say, they nailed it. From the warm greetings to the live music that set the tone as soon as we arrived, it was good vibes all around. We were excited to see some fresh faces from new restaurants join in, curious to learn more about BRCA. Hopefully, we’ll keep that energy going with more new faces at our upcoming events, plus our amazing regulars, of course!

Great Food, Great Faces At The Cellardoor
Our latest luncheon at The Cellardoor was full of good vibes, great food, and even better company. We loved seeing familiar faces and meeting lots of new ones, including inspiring women entrepreneurs and fresh faces from Bali’s growing wellness restaurant scene. It was a great reminder of how dynamic and diverse the island’s food and hospitality landscape truly is.
Jeroen van Overbeek, one of our BRCA board members, kicked things off with a warm welcome, and Anthony Syrowatka (one of the founders) gave a heartfelt thank-you to Hatten Wines, one of our longeststanding supporters. The in-house chef served up a fresh Tuna Crudo to start, followed by both Pan-Seared Salmon and Braised Short Ribs, and wrapped it all up with a delicious opera chocolate. Safe to say we left full and happy!
Shoutout to Pak Rai, Ibu Dayu, and the Hatten team for making everyone feel right at home. We also had fantastic speakers sharing insights on food waste management—an important topic as Bali moves toward its 2027 goal of becoming free from waste, as outlined in the governor’s circular.
To wrap things up, we ended on a sweet note with almond pudding, chrysanthemum jelly, and tropical fruits—light and refreshing.

A Big Thank You To Our Amazing Partners And Sponsors
Your support means the world to us. It’s because of you that BRCA continues to run smoothly and stay passionate in our mission to make Bali a world-class gastronomy destination.
This month’s delicious luncheon wouldn’t have been possible without you! Thank you to Bali Sustainable Seafood and Sukanda Jaya for the incredible food support, and to Hatten Wines and Bir Bintang for keeping the wine and beer flowing!
We’re truly grateful to have such an incredible community. Huge thanks to our partners and sponsors: Hatten Wines, Bali Sustainable Seafood, Balian Waters, Bir Bintang, Gaia Digital Agency, PT Multifortuna Sinardelta, Now! Bali, and PT Sukanda Djaya. You’re more than partners—you’re family.
Our hearts are with the Balian Water team as they navigate this difficult time. We’re thinking of them and hope to see them back stronger soon.
From the whole BRCA board: thank you for believing in the power of community. We couldn’t do this without you.

And we’re excited to welcome our newest silver sponsor: Restomart! A one-stop shop for professional kitchen solutions, Restomart offers a wide range of equipment to support and upgrade your business. If you’re looking to level up your kitchen, now you know where to go.

Inspiring Speakers Of The Day

TOBIAS WILSON (CO-FOUNDER, SHIVA INDUSTRIES)
Meet Tobias Wilson, the sharp and engaging co-founder of Shiva Industries. During the luncheon, Tobias brought the spotlight to a pressing issue—waste pollution in Bali and how it’s directly affecting the island’s tourism industry. He pointed out something many of us tend to overlook: food waste. Not only does it release a significant amount of greenhouse gases, but organic waste also makes up the largest portion of Bali’s overall waste problem. And yes, it’s a real nightmare.
So, what’s The Shiva Way of tackling it? Their answer is a 24-hour organic waste solution that turns food scraps into fertilizer using their Aerobic Digester system. These state-of-the-art machines use aerobic digestion to break down organic material into nutrient-rich fertilizer, cleanly and efficiently. The system is already in use at places like The Westin Nusa Dua, and now Shiva is rolling out a more compact version, perfect for restaurants and smaller businesses.

FREDRIC TANUWIJOYO (CO FOUNDER, Z BIO)
At the luncheon, Fredric introduced ZBIO with a friendly, relaxed, yet serious tone—perfectly matching the urgency of the topic. He spoke about Bali’s growing waste problem, where over 70% of the island’s waste is organic, much of it coming from the hospitality sector. ZBIO offers a smart, regenerative solution by turning food waste into valuable resources like fertilizer and animal feed. Their circular system supports local farmers, brings fresh produce back to kitchens, and helps businesses actively participate in Bali’s zero-waste mission.
What makes ZBIO especially compelling is its accessibility. They currently offer free food waste pick-up services for restaurants, making it easier than ever to get involved. The system is fully traceable, with tailored reports that support ESG goals and showcase impact to guests, investors, and regulators. Whether you’re a chef, GM, or part of procurement, ZBIO works with your team to make the transition smooth. It’s a powerful way to turn waste into worth—for your business, your community, and the planet.

Eco Tourism Week
We were happy to join Eco Tourism Week by Eco Tourism Bali on 28 May 2025 at The Meru Convention Hall. BRCA SUSTAINABILITY CORNER

Bali aims to be waste-free by 2027. Under Circular Letter No. 9 of 2025, F&B businesses must ban single-use plastics, sost and process waste on-site, and reduce landfill use. Non-compliance may lead to permit revocation and being publicly listed as “not environmentally friendly.” Plastic bans apply immediately; full compliance is due by Jan 1, 2026. As a hub for F&B. BRCA is here to support members and has partnered with key organizations to help meet these requirements.
1. noovoleum – Collects used cooking oil for free and provides incentives per liter.
2. Z Bio – Offers collection and recycling of food waste into sustainable animal feed and organic fertilizer.
3. Bersih Dari Sampah – Provides paid residual waste collection: fees vary by location.
4. Eco Tourism Ball – Awards the Eco Climate Badge to accommodations meeting GSTC and SDG standards.
