The Confluence: Apéritif’s Borderless Food Concept meets French cuisine of the highest order from Michelin-starred restaurant, Caprice.
On December 8, 2023, Apéritif will celebrate the refinement, artistry, and time-honored techniques of French cuisine through a four-hands dinner with Chef Guillaume Galliot (of three Michelin-starred restaurant Caprice in Hong Kong).
This meeting of minds between chefs Nic Vanderbeeken and Guillaume Galliot ushers in a confluence between Apéritif’s Borderless Food concept and French cuisine of the highest order from Caprice. The splendor, grandeur, and elegance of Apértif’s colonial-style manor in Ubud will serve as the fitting background for both celebrated chefs–as they share a passion for global flavors brought to life by French cooking techniques.
Chef Guillaume’s creations for this four-hands dinner will highlight the gifts of the ocean and terroir. He reimagines Asian spices and sauces, lending French flair and refinement to well-loved dishes like laksa. His meal-ender marries delicate layers of puff pastry with the freshest fruits from the tropics. These dishes harmoniously meld with Chef Nic’s culinary masterpieces, which burst with unexpected flavors.
